Ahhhhh look at it, so beautiful! Made this yesterday to pass time! From what I read, Challah bread is known as egg bread. They don't sell these here in Singapore, so I decided to bake them. It's my first time eating challah bread too! :D One of the things I rarely want to bake is bread, due to the long waiting for the bread to rise! :( But the end results are nice! Homemade bread are always better than store-bought! There was once my teacher told me that they use hair to make those store-bought bread! To give it texture or something. EWW.

I know, I know, something went wrong the the 2nd bread. It looks so.... wrinkled... and hole-y.
CHALLAH BREAD RECIPE                 Makes 2 loaves
Ingredients
-1 tbsp honey
-1 + 1/4 tsp stevia
-1 1/4 cups warm water
-2 1/4 tsp active fry yeast

-1 1/2 tsp salt
-2/3 cup olive oil
-2 eggs
- 5 cups unbleached flour
- 2 tbs olive oil
-1 egg white
-1/4 tsp stevia


Directions
1. Dissolve first 2 ingredients in warm water in a large mixing bowl. Stir in yeast and set aside for 15mins, until yeast forms a creamy layer on top. Stir in salt, 2/3 cup oil, and beaten eggs. 
2. Add flour 1 cup at a time, until dough is slightly tacky, but not sticky wet.
3. Turn it out onto a floured surface, knead until smooth and elastic, about 10mins. 
4. Place dough in a lightly oiled bowl, and turn the dough over a few times to oil the surface, then let rise until doubled in size in a warm, draft-free place. Approximately 90mins.
5. Cut dough into 2. Then cut each half into 4. Youtube search how to make challah using 4 strands! (That's what i did LOL)
6. After plaiting, let braided loaves rise for 1h.
7. Preheat oven to 175 C. Line baking sheets with parchment paper.
8. Make glaze by mixing egg white with 1/4 tsp stevia. Brush braided loaves with glaze to make shiny crust. Bake for 30mins. Then bake another 10mins while keeping an eye on it as the loaves brown faster than you think. When its brown enough to your liking, take it out, and viola! It's done! 


Okay, so after that I decided to use the wrinkled bread to make french toast! Thrown into the fridge overnight then baked for 45mins and topped with cinnamon and icing sugar(not shown)! :D Breakfast done for the next few days! :D
Dog loves the smell of freshly baked bread. Omm nomnomnom. 
Oh yah! My goodies arrived from iHerb. Non-fat dry milk powder (all they sell here is full fat :(), Erythritol (low calories sugar), small bottle there is vanilla stevia (heard a lot of good reviews about it), and lastly, brown rice protein! Have I ever told you how much i love brown rice milk tea!? It's so creamy and amazing! That's the only reason why I go to Each A Cup :P
Didn't bought that little ducky from iHerb. It's one of the FIVE ducks he has. He's such a spoilt little pup. :3
Oh! Breakfast today! Hotdog bun with cheese and mustard. Mom bought this near her workplace last night. It's nice!

I love how it looks! Everything is handmade. I just bought the felt from Popular and measured my phone dimensions to cut out. 
I HAVE NEVER SEWED IN MY ENTIRE LIFE. So this is my first time sewing and I'm proud with the results ^^ Hey, i wanted to use glue to make this initially. HAHA
The green panda is a prototype for my friend's birthday because i have no idea what the end product will look like at first, so I didn't want to use the only piece of black and white felt i have.

The 2 products together! Took me very long to do them! Because i had to consult YouTube on how to sew. LOL. I think the green panda (my first try) took like 3days, with slacking in between of course. :P The balck and white panda took me 1 day only! :D
On another note, I went winter clothes shopping. I'm going Korea on a school trip in 2 weeks time! Anddd I don't have winter clothes because well, Singapore is a tropical country, so no seasons! But I want snowwww!

Sconesssss. This is my first time makin' them!... and i have no idea what they're supposed to taste like! haha! Never had scones before ;x 
Hmmmm, but it didn't taste that good! I realized after baking that i used 1 tsp of baking powder instead of a tbs x.x And it wasn't sweet enough... Hmmmm, gotta change the recipe more.
I'm freezing most of it so that i can eat them for breakfast the next few days. Can't let food go to waste can ya?
Well, i woke up in the morning to make the scones but it was kind of a failure :( 
When noon came i made lunch using the oven to bake everything! My new best friend. xD
Baked 1 egg plus egg white left over from the scones-making with 2 handfuls of spinach. And a baked sweet potato. I LOVE SWEET POTATOES. THEY'RE LIKE, A ROOT. THEY'RE LIKE, A POTATO. THEY'RE LIKE, SWEET. Awesome.
After that i made a matcha latte with about 1/2 cup of skim milk and stevia. 
Then a cute penguin biscuit!
These bite-sized baked honey cornflakes are baked by my mom! It's a popular snack here during the Chinese New Year. Wayyyy better than those stall-bought ones in my opinion!
Went birthday shopping in the evening and found this cute 3 pieces animals cord wrapping! The right-hand side is a hand-written card on a back of a parchment file (parchment file! Cool eh!). Both are for a friend's birthday! :D
I have another closer friend's birthday coming soon, so i went to shop for her stuff too, but we're good friends so I wanna get her something more special! Something much more homemade? :) But not food! I'm not the kind to give just food for birthday because I find it hard to remember the person who gave you the gift after you finish eating it! So i love more meaningful gifts or at least something i can keep. :D

This week flew by so fast! It's finally sunday and I decided to bake some stuff! 
Mocha Almond krispy... doesn't that sound heavenly?? :D  Especially if you love chocolate, almonds and coffee. NOW, who would say no to that? :P
This here is the end product after refrigerating. CAN YOU SEE THAT CHOCOLATE??! YUMMMM.
I adapted this recipe from dessertswithbenefits.com, so credits goes to the brilliant creator!
It was supposedly no bake, but after refrigerating, it became kind of soft, so i popped them into the oven and heated them up for 5mins. My god, so gooooooood.
MOCHA ALMOND KRISPY          24 mini servings
Ingredients
-2.5 cup crispy rice cereal 
-1/4 cup old fashion oats
-1 tbs flaxseed
-100g (1/4 cup) maple syrup (lessen this amount if you want it less sweet. Or just use the same amount of brown rice syrup)
-64g (1/4 cup) almond butter (or any neutral tasting butter. I used a mix)
-1/2 tsp cocoa powder
-1 tsp + 1/8 tsp almond extract
-28g chocolate protein powder (I didn't have chocolate flavor so I used vanilla whey protein + 1 tsp cocoa powder)
-1 tsp instant coffee
-some dark chocolate (I used Lindt 90% chocolate plus some orange flavoured chocolate. Awesome)
Instructions
1. Line a container/ brownie pan with parchment paper.
2. In a large mixing bowl, stir together cereal, oats and flaxseed.
3. In another microwave-safe bowl, stir together maple syrup, almond butter and almond extract. Microwave at 30s   intervals, stirring in between until runny. (I don't have a microwave, so i use a preheated oven)
4. Stir in protein powder and coffee powder by one spoonful at a time into wet ingredients.
5. Scoop mixture into pan and flatten.
6. Melt chocolate and drizzle over. Refrigerate until firm. 
7. Cut and enjoy! :D


Notes and Nutritional info
No bake, high protein, vegan, gluten. 
Nutrition stats per serving: 44kcals, 6g carbs, 2g fat, 2g protein, 2g sugar (This is kind of high in carbs D: But look at that protein content for a tiny piece! I'm planning to further modify this recipe to include less sugar because, well I didn't expect it to have that much D:)
BY THE WAY, this is the coffee i used for this recipe!

I saw this on the shelves in Cold Storage yesterday and just couldn't resist. Glad i bought it! It smells so much like caramel when you add hot water to it. I had 2 cups of it today! I know, i know, one shouldn't consume that more caffeine in one day, but it's SO nice x.x

Oh yah! Stuff i did today: I went for Jeet Kune Do training. Its some form of martial arts in case you haven't heard of it. I trained from 2pm to 4pm. I feel so inspired. Every time I train, I learn something new, either in the mental state or the physical state. Every Sunday, I would feel so lazy to go training, but I drag my lazy butt down there and have never regretted! Today was no exception! I'm so glad i joined! :D
